Balwen Welsh Mountain Lamb
We started breeding Balwen Welsh Mountain Lamb in 2008, buying some Ewes and a Ram from a local breeder. We will only have a few of our own lambs for meat each year in November and December as we will keep the Ewes Lambs for breeding, in order to build our flock numbers. We will supplement our own production with Lambs from other Welsh farmers during other times of the year.
Balwen Lamb Meat
The Balwen lamb is a much darker sweeter meat. They do not produce large carcasses, but what they lack in size they make up in flavour and sweetness.
The ancestry of all Balwen can be traced back to the Tywi Valley in Carmarthen. The Balwen sheep has a base colour of black, brown or dark grey. It has a white blaze on the face running from the poll of the head down to the nose, four distinct white socks, and a half-white tail. The name Balwen is Welsh for white blaze. The Balwen is a small, hardy breed. They are easy to manage, have few health problems, excellent feet, and thrive with only the minimum of supplementary feeding at peak times of the year. The ewes make excellent mothers, having very few lambing problems and plenty of milk to feed the lambs. Most ewes have a single lamb the first time, but thereafter many twin, and some have even reared triplets. The Balwen lamb makes an excellent carcase, small in size approx 10 to 14Kg, tender and full of flavour.

We also buy finished lambs locally direct from sheep breeders and via the local abattoir.
For example some of our lambs are from James Thomas at Paternoster Farm, Hundleton overlooking the Cleddau Estuary. The pastures receive plenty of moisture from the fresh sea breeze, creating lush grass and thus succulent lamb. James uses a Texel Ram, which produces lambs with a good conformation (shape), on Various Breeds of Ewe including Poll Dorset, Welsh, Speckled Face, Pure Texel, Welsh Mule Cross Ewes. James breeds the Lambs all year round to ensure a good supply of the right size lamb for our customers. The whole lambs range from 17 to 20kg when they arrive back at the farm shop for hanging.
We dry age and mature the lambs for 7 to 10 days in our chiller to develop the tenderness of these succulent lambs.
